Been working on this for a while, using my old '79 roster from a few years back that I completed. So here I'm working on not just the roster, but incorporating additional visual add-ons to enhance the experience and give it a true historical feel.
At the link below includes not just the roster, but DAT files that should be placed in the My Documents/Madden NFL 08 folder as well as a folder containing TPF files for the stadiums. 99% of the credit on those goes to Big Daddy Cool for allowing me to use some of the images he created before but also providing the ideas on what stadiums to use as the base for each. Please note that the TPF files are intended to work with the new stadium dat files from the latest FF/FI Mod. Credit, of course, to all who have contributed to that project from RevanFan, NICK, Q, elguapo, KeepinItTeal, Rogerjinx and a host of many others (a special HUGE thanks for elguapo for all his video tutorials and guidance). Also goes without saying that Calhoupe’s scripts are essential.
The next big items I plan to work on are coaches (using only the DB Editor to alter these, of course), intro screen, Pro Bowl uniforms/helmets and some TPF files for Super Bowl XIV for those who wish to use this for franchise play. The roster itself is pretty sound - as accurate as I could get, including real free agents and recent retirees from that era filling out rosters for the "dummy" teams (using defunct WFL franchises) as well as the free agent pool itself.
This is work in progress, and all constructive feedback is appreciated. I'll post some screenshots later.

Updates in the first post. Corrected most of the TPF files to account for changing scoreboard and other graphics when it's night vs. day game. Had forgotten about that before. Plus some other cool little updates to the TPF's, as well as uniforms, and continuing to update depth charts for accuracy.

Great work...can you do this for Madden '04???? I just don't like the way '08 looks and feels.

I hear ya man, and I really wish I could. But that's why my 1966 franchise journal suddenly stopped - my old pc crashed and the new Windows 10 isn't friendly w/ Madden 2004, so I have no ability to access that game anymore. At some point, I'm hoping to get lynux installed to my old pc and perhaps use Wine to access my old windows programs.

Here's an update to the FieldArt dat file, which I'll have the new version posted soon to the download site in the first post. This updates the Patriots' endzone with the graphics seen here in the screenshot:
This was something discovered when I was watching one of my old '79 broadcasts and confirmed here by Tim Brulia and Bill Schaefer over at Gridiron-Uniforms.com (http://fields.gridiron-uniforms.com/controller/controller.php?action=view-year-all&year=1979)
To install this field, use the DAT File replacer and open up the FieldArt.dat file. Unzip the file attached here and insert it into slot# 49 and save (make sure the Use zero-based arrays box is CHECKED).

Update: Eagles home uniforms. Fixed the mesh look as I had the original template inverted. The little jersey holes were black and really should have been white. So here's the way it looks now:
Open the UNIFORMS.dat file in the DFR (zero-based arrays box is CHECKED) and insert this file into slot# 134. I'll be sure to include this change in the next update to the first post as well.
