Of the undrafted guys, I'm most excited for QB Aaron Mincy, ILB Jahleel Orchard, CB Andy Farmer, and SS Amini White. Mincy is very raw, but VERY fast. Like, 25 year old Dwight Fraser fast. Maybe even faster. The other three are also very talented physically, and I think they'll have a good shot to make an impression. For the draft picks, I'm obviously interested in the top picks, but I'm very curious which of the two drafted corners will be better. On a Madden-based level, the later pick is actually higher rated. But we'll see how they actually play. They're both shorter than I like my corners to be, so that's too bad. Both undrafted corners are 6'1" or taller.

Also, if TE Brandon Stills does really well and shows some ability to block... I'm not gonna say anything, but Stills is 21 years old, and Charlie Parker is 34.

CB Jeff Tate broke ribs in the opening preseason game, and will miss the remainder of the preseason. He will be fine for the regular season, though.

I almost put Mincy on my list, but I thought he was a long shot, considering you drafted a QB in the 2nd round and also have Justin Turnbill, who did a decent job as a depth guy. But with the new info you provide, I expect Keyarris Roberts to be the 3rd-stringer and Mincy on the practice squad. Of course, the results of the preseason could change that.

As for the FB/TE spot, I do expect Parker to eventually get too slow and/or retire. Stills could be a good replacement, but also don't forget about Allen Brown.

Edit: I don't know if it's in my head, but I've always found that speedy quarterbacks have more zip to their throws. Back when I had Lucius Stolte (SPD 84), his throwing attributes were not that great but he always managed to throw it deep and accurately, which made his attributes go up really fast. I'm trying not to get our hopes too high, but I hope you experience that with Aaron Mincy. He wears my lucky number, so that will totally help.
