A lot of it comes down to luck, but there are a few things to keep in mind. First off, watch your blockers, not your returner. You're looking for a possible running lane - the important (but obvious) thing here is to keep your blockers between your returner and the would-be tacklers. Always run "inside" the blockers. Running down the sideline is great for this because then they can only come at you from one direction, but you won't always have that opportunity.
The second important thing is that there is absolutely no room for hesitation - pick a lane and go for it. Also, make liberal use of stiff arms, spin moves and the highlight stick. The easiest one to pull off is to just push the stick forward, but it doesn't always work. When going for a stiff arm, keep in mind that you might need a bit of wind-up time depending on which hand your returner is holding the ball with, so anticipation is key. Getting past the first man is key and that's where your moves will come in handy.
I'm attaching one of the kick return replays (didn't save the other one, sadly...). It shows that a lot of it is just getting lucky with the blocks - in this case I had a lot of pancakes - but you will notice the spin move on the first guy there that sets Patterson free to run.
